My wife and I are really into beans these days.

One way to bring out the flavor in beans is to cook them first, then remove a cup full of the cooked beans once they are tender, mash them up good, and place them back in with the remainder of the beans for another half hour or so. The resulting dish tastes like a thick, bean soup.

Our favorites peas/beans are purple hull peas (aka black-eyed peas) and black beans. Beans are very filling too.

A great, meat-free dinner is:

black-eyed peas (semi-mashed) topped with jalapeno peppers
cornbread
corn-on-the-cob
sliced tomatoes
iced black tea

We enjoyed that last night. Tonight we're having:

black beans (semi-mashed) and sprinked with Caribbean Jerk flavoring from McCormick
baked potatoes
garden salads
wheat rolls
iced black tea
