Homescreen replacements don't have a lot to do with whether the OS is open sourced or not. But since you mention them, allow me to recommend my personal favorite, Launcher 7. Replaces the homescreen with one that mimicks Windows Phone 7's gorgeous tile interface. Sure, it force-closes once in a while (like all Android apps) and serves up 100 ads a day, but it's so much better than the standard butt-ugly homescreen in Froyo.
