That's right, Chris. If the capsules are 30% and you want 3000MG then take 10 of them. If you want to spend more and use 55% capsules, you take less.

So the only line that really matters is the Omega-3 line? For instance, "Omega-3 300mg."

I would use the total of the EPA and DHA lines. When there is a total omega-3 line that varies from that, I ignore it. I have seen no evidence to support including anything but EPA and DHA in one's dosage.
