It's not an invasion of privacy if Apple never sees that information, and thus far there is no indication that they can or do. The information is on my phone, and on my computer. If someone gets my iPhone, they're going to know a lot about me anyway. That is, they will if they can get past my passcode more quickly than I can get to a computer or another iOS device and wipe the phone.
