Is there any evidence that Apple does collect it?

It's one thing to have the data on the iPhone and within the iPhone's backup. It's a potential security problem if someone gets physical access to the phone or the computer.

But so far I haven't seen evidence that even suggests Apple harvests this data.

In your zeal to cast Apple as being evil, you're overstating the problem.
