Ah there's the rub. Quite clearly, you are in control of what information you keep on your phone, other than the files that your phone decides to keep for you without your knowledge. For my part, I run a e-wallet program where I maintain my account login info, bank accounts, credit card numbers, etc all in an encrypted format and with a password protected front end. I would not feel comfortable storing the same data on my phone without some assurances of security.

It's not up to Apple to decide that my location history is not worthy of the same level of security. I have no problem with Apple having anonymous data about Person A's precise location and what cell towers he's communicating with at the time. It bothers me if it can be attributed to me. That the file exists means it can be subpoenaed, my spouse can ask me about it, etc. Not that I have anything to hide, but what if I did? There is no good reason for that file to exist.
