If you like huevos rancheros, which are very easy to prepare, it is likely that you will go nuts over chilaquiles in green (tomatillo) sauce. The citrusy tomatillos are really good. There is a Mexican food dive in town that makes them to perfection; had them yesterday. Here is a very good recipe should you feel adventurous:

I like to add either sunny side up or scrambled eggs to the chilaquiles for protein.
