Hitler didn't use Gas because he knew the Allies had large quantities at their disposal just ready to be dropped on German cities.

But under Hitler's regime, German research into nerve agents successfully produced Tabun and Sarin.

Also, in the above link, you'll see that the SS John Harvey was sunk in S. Italy. It was carrying Mustard Gas. The sinking caused a number of merchant and civilian deaths as a result. But that ship carried the gas in anticipation that Hitler would use German chemical weapons in Italy.

The truly crazy ones were the Japanese, who actually used Chemical (and biological) weapons in China. Apparently each use has to have the direct approval of the Emperor.
