Let me make clear I wish I ate better than I do but I definitely eat a lot of veggies and definitely do not fry my food.

I grow so much food that we can't consume all of it, so I give some to my southern neighbors...I just marvel at what they do with a zucchini or swiss chard when we get to sample some of their creations. They manage to take something green and healthy and turn it a couple of thousand calories of artery clogging mush...


Now that's scary......but not surprising.

There are such simple ways to make vegetables more appealing. One of them I learned while in the Cote D'Azur is to add lemon. Lemon makes spinach and asparagus taste so much better. Certain sauces can make vegetables taste much better as well.....and I don't mean that cheesy crap. American cooking doesn't allow for those tricks......as a consequence, we grow up hating vegetables. My favorite meal right now is sauteing red peppers and onions in olive oil. Its so good I start eating it before its done. <g>
