Tables are a mess in HTML. We have been spoilt by standard PC applications where tables looks like an easy job. In Excel tables are the basic data structure, even in MS Word 2010 it's just a drag across a grid, the final position of the pointer determines the number of columns and rows. But creating such a tool for SI and translating the user input to HTML would be a very difficult job.

I have found that the best way to add a bigger table to a message is to view it on the screen and then create a screenshot. Incorporating the screenshot as an image looks better than the output of any potential SI table tool. Naturally a disadvantage is that text content of an image table is not accessible to searches.
