Wiki--thinks that this time it might be different for polar bears as it may be the rate of change is too fast for them to adapt (apparently as opposed to the slower rates during the inter-glaciation periods). They do admit though one can't really call what will happen about this. Apparently its going to turn on whether or not the bears can find a food source that is sustainable and nourishing as the Ring Seals. But it could be, as you pointed out, that the bears can morph back into grizzlies.
