The volume for options represents buying and selling of the options, while the open interest represents the number of open contracts. I would imagine that when someone exercises their options, it's counted as volume on the stock, and a reduction in open interest, but wouldn't change the option volume. After all, the options aren't bought or sold, they're just canceled out of existence.
