Many people put in early orders (before work, night before maybe) that change the bid and ask. Internet brokers allow you to put in orders 24hr/day.

If people decide to pull their sell orders from the market, the ask moves up. If people raise their buy orders, the bid goes up. The reverse is also true.

Sweez, this information can be seen on realtime systems before the opening bell. Also the price can be manipulated by people that have the ability to trade after the closing bell. These are usually people
trading on "instinet". When you hear that the prices are trading higher/lower on "instinet" this is what they are referring to. I believe is costs $2,500/month to have these trading abilities.
