Email after hours is just a matter of who wants to work then and who doesn't. I'm theoretically retired, but in fact, get emails and phone calls after hours if required. I have been in a server room at 3.30am on New Years Day helping fix servers. Yes, we could have just ignored them and done it during working hours. Customers would have had to change supplier. Some businesses and employees prefer their customers to not change supplier. Some businesses and employees make special after hours efforts.

It's quite simple really.

Our son in law is a network engineer for a bank in London. If some computer spring a leak, they can't wait until official working hours to fix things. They have to get to it immediately. Customers don't want their money stuck in a faulty computer. If the company doesn't pay him enough for what he does, he'll go and work somewhere else.
