But what if I buy 2000 acres. Am I free to restrict people from coming onto my property? What if I build several hundred homes on my property and only sell to people of my personal choosing? Is that permitted?

It might not be permitted (zoning laws, anti-discrimination laws, etc.) but it should be.

Yes - it is your property till you sell it. Of course, you can have a contract with them which prohibits them from doing things that you don't like even after the sale. That is different than how most neighborhoods develop.
