Brendan, for a Zip drive, you won't notice significant different between a SCSI and EIDE versions, the SCSI may be little bit more efficient when ASPI is used in multitasking environment. The parallel version of zip drive is noticably slower because it failed to utilize the EPP port's 2MB bandwidth. The new Zip+ may solve this problem. So for a zip drive, it is technically incorrect to say the parallel port is the bottleneck when there are device which also use EPP but can achieve 1.5MB/s.
