I like caribou, that would make some good chili. it's expensive here, deer are almost free. Just the processing charge. And my well (water) guy does the hunting for me.

Yep, I've made chili from wild turkey a few times. No fat, and great flavor ... the meat really absorbs the spices.

Never tried wild pig, but I can imagine it would be good too, as wild pig is very lean compared to our commercial porkers!
