McDonalds doesn't have to change ... they just need to keep providing what their customers want. The presence of salads and oatmeal on their menu shows they'll sell whatever people want.

I think the effect of food related lobbies is pretty insignificant. Profit seeking companies succeed by selling people what they want ... and most people don't want tofu.

Why is beef more popular than tofu? Well, it's because the beef lobby is powerful and the tofu lobby isn't, right? Wrong. Soybeans are an agricultural product just like beef is. A tofu lobby would have hordes of farmers plus big corporations like Conagra behind them. 'Big Beef' has no advantages over 'Big Soy', except consumer preferences.

And yes, it's very similar to the situation with oil, where people hype the alleged power of Big Oil. People don't buy gasoline or take trips using aviation fuel because a Big Oil lobby wants them to.
