OTOTOT: Thank you for your great post. However I noticed you didn't include Canola Oil on your list, which has the great advantage over Olive oil in that it's about 1/4 the cost, yet seems to have a similar mono:poly:saturated ratio. Wonder if you can give us an opinion on this?

I heard of olive oil. The incidence of heart disease
in people who use olive oil is less than in the general
population. Olive oil has monounsaturates in the ratio
73 parts to 8 parts of polyunsaturates. Better
monounsaturates than saturated fats. Better poly
than monounsaturates. That is for sure. Coconut oil
is the worst offender when it comes to saturated fats.

HI Paul,

Thank you for your post. An example is what we see in Italy. We have
in this country the lowest heart attack rate in Europe. The further
South we travel, the less heart attacks because people on the southeren part of the country consume 3 times more olive oil and they don't relly know what the heart attack is!! The reason is that in the south of Itlay using butter is almost unknown and not part of the tradition.
