Hi Michael: I can't believe you were able to find a dentist yesterday! That's nearly my worst fear on earth - needing emergency dental work and having to depend on whoever you can find. I need mucho prozac before seeing a dentist that I know and trust!

Well, time for the pre - Cowboy game partying. I echo all the other good wishes made today by all of you. One thing I'm thankful for this year is that I came across SI in the first place, and all of you in in particular. I really like this group a lot.

P.S. Spank - I didn't know what I meant either, but it sounded good at the time ;-)

Michael -

Jalapeno Cornbread Stuffing

1 Bag Pepperidge Farm Cornbread Stuffing Mix
1 large red onion, chopped
1/2 cup pickled jalapenos, finely chopped
4 tablespoons butter
1 small can niblets corn
2 1/2 cups chicken broth

Sautee onions in 1/2 of the butter.

Boil chicken broth and the other half of the butter. When broth is boiling, and butter is fully melted, add stuffing mix, jalapenos, corn and sauteed onions. Mix well with fork.

Tastes best when roasted inside a turkey or chicken, but also good when simply baked for 1/2 hour at 325 degrees. Not quite as spicy after it's been cooked.

Yummy.
