The shop has only been open three months. The couple may not yet have a good sense of how much product is required each day, and I would imagine that much of the work that is done in a bakery is done in the late-night/early morning hours. I can see an occasional 24-hour day being put in, especially if they offer a wide selection of products and do all the baking themselves or, on random days, the business might be short of help.


Exactly. Baking takes a lot of time and it's pretty obvious they can't yet afford to hire a baker. If they realize at night that they need a whole new batch of bread or cake or cookies or whatever by next morning, somebody has to stay up and bake it.
