Stock options nowadays are very company dependent AFAIK. Lots of companies give bonuses in stock itself instead of options, which ends up being much less volatile: less upside, less downside. Plus you can usually sell it immediately without vesting period. So no risk, but not much return either.

Like I said before SV has more startups and that's still very much equity game where you can win a lot if company prospers, but you can also get crappy salary + worthless equity if the startup does not work out. I know some people who went through 2-3 failures in a row - not much fun. I know some who made good money too.
