Here are the comments I can find on it. I have not used any of either product.

It is all carb (55gm/.5 cup W 3 gm fiber) but it isn't wheat. You could use use xanthan gum as a thickener since it contains NO starch and the carbs in it are entirely soluble fiber. Unlike starch based thickeners, xanthan gum thickens by blending, rather than heating. It saves time & carbs. The secret is to add literally just a tiny pinch and then stick blend for a full minute. It will get slimy if you use more than a pinch. Only add more if you need more thickening. Bob's Red Mill works much better than EnerG or Now Foods. If you buy some, you will have it for years since such small amouts are used.....so freeze the surplus.
