I just go with my gut. Literally.

I don't think I get a reaction from soy sauce (shoyu). Tamari has zero wheat, so that's preferable, but I think I can do shoyu without any issue.

I don't think I get a reaction from sushi, and am sure no reaction to sashimi. Miso soup is OK for me, too.

Tempura is out of the question, that definitely has wheat. Alas.

Now that wheat free is a fad, a lot of chefs are using rice flour as a coating before frying. It works well.
