Sounds wonderful and, being a huge pepper fan, am definitely trying it tomorrow.

What scares me is the balsamic. I've had some in my cupboard for a very long time but have been afraid to use it. I mean, if I do it wrong the dish is ruined. This will be a first for me. Fingers crossed.

The reduction - thick or saucy?

Roasted veggies are yummy... I generally leave off the toppings and have them plain... I like them baked in a very high heat for longer so they begin to burn just a little bit...
