This sounds good too:

Refrigerated coconut milk stiffens to a thicker / creamier consistency, would be good as a dessert topping or in coffee or most anywhere as a substitute for whipping cream. I usually get a spoon for the coconut milk left at the bottom of the can and lap the stuff up. The stuff is delicious, not sure about the calorie level though (not that I count calories or analyze the food we eat, but we do eat pretty good overall).
