If iWatch is light, has Bluetooth, cloud and Siri capabilities, then it should do very well.
It is interesting to speculate everything it could be. Most of us start by thinking about what functions the iPhone has that could be transferred to the iWatch. Many I think can but I am still looking for the functionality that does not exist as yet. One that comes to mind is mobile payments. Like you suggested, the iWatch would be with you essentially all of the time and it would be much easier access than digging into your purse to get your iPhone so there are a lot of possibilities here.
