I've used this no-knead method for the last six loaves I've baked.

The first couple of loaves I added half a cup of extra water. Consequently, the dough spread out more as it baked, and I didn't get the same loft as in the video. Still very tasty bread.

The next loaf, I tried spelt flour (influenced by The Pre Beakerite posts). Used half spelt and half unbleached white flour. Baked it in a loaf pan instead of on a flat sheet.
