As sugars go, both agave nectar and pure maple syrup are some of the least harmful. They both have low to medium-low Glycemic indexes and a higher degree of sweetness than table sugar for roughly the same number of calories. And they both have trace amounts of minerals including calcium, potassium, magnesium, and iron.

However, agave nectar still has some advantages, as follows:


While maple syrup is delicious in some applications, its strong flavor and sometimes metallic overtones can make it a less versatile ingredient. While the sweetness of agave and maple is comparable, agave has the lower Glycemic index.

Agave syrup is approximately 25 to 30 percent sweeter than table sugar and has trace amounts of minerals including calcium, potassium, magnesium, and iron. Agave ranks low on the Glycemic Index, meaning it does not affect blood sugar and insulin levels as much as regular sugar... this means no sugar shock, which is why I much prefer agave...

Maple syrup is about twice as sweet as table sugar and has trace amounts of minerals including calcium, potassium, magnesium, and iron. Maple syrup can cause blood sugar levels to rise, so those with diabetes should use it sparingly, and really should not use it at all...
