Your issue, apparently, is that you have stereotyped middle-aged black men as something else. She was simply making a point about how impressive this place was that had experienced, professional waiters instead of college kids acting like heathens. It is difficult to find any "racist" slice of life in there if one is objective. You mean middle aged white or Asian or Latino waiters aren't as professional as black middle aged waiters? How so?
