Thanks for the video, apple ravioli looks great, I already make something very close to it...

First of all, and respectfully, I think agave is getting a bad rap for the wrong reason... the level of fructose is not an issue because agave is the only natural sweetener that the body can metabolize slowly, therefor there is no sugar spikes in your blood... it's the healthiest of all the sweeteners... dog poop has no fructose in it, but that doesn't mean it's better for us to eat... the actual level of fructose itself is not the concern, what makes agave so healthy is that it metabolizes very slowly so the pancreas isn't kicked into action to create insulin for no legitimate reason... therefore, with agave the blood sugar remains stable... my personal family physician has a dual specialty, i.e., family medicine and sports medicine, and he's very fluent in health nutrition and tells me that agave is the only thing that anyone should use... I know he's right because since I've been using agave I'm off all diabetic meds and my blood is clean...

i don't have a mandolin to slice the apples so thinly, but i do make the same kind of thing with extra virgin coconut oil, I also add a touch of allspice along with the cinnamon, and I use crushed walnuts instead of pecans, I add a little water and steam it out over the stove... it tastes very much like apple pie without any pie crust, it's delicious and it makes for a great dessert...
