Because if they admit that it's all just an unworkable fantasy that will never exist, they would have to admit that their fundamental political and social convictions are really just vaporware, when held up to scrutiny.

It is even worse than that however. Too many Libertarians have confused desired outcomes (usually economic ones) with physical reality which limits them. Thus the war on science which unfortunately has many Libertarian Generals in its ranks. Just because I desire something, doesn't mean the Universe obliges by making reality amenable to my wants.

In all fairness, there is a somewhat symmetrical problem which liberals/the left has as well, which is that in commerce (sometimes even economics) there aren't per se right answers, instead its about winning. I think much of the left/right conflict comes down to this divide. The Left is always looking for the Correct Answer, which is better aligned with science (although still wrong) but does poorly in commerce, while the Right knows what God wants for us and knows he made the Universe to be compatible with what we are supposed to be. Unfortunately, that has a few problems with scientific reality, so science must be wrong...
