I have contacts in the biz and get lots a free fish. So I know stuff -g-

/edit. btw a side note on Halibut. They are a natural for farming. They like to sit about of the bottom an do as little as possible, and generally goof off. The fully pensioned unionised workers of the fish world. I could call them "banker fish", as they sit on banks, but I would not insult such a nice fish.
