've been canning food for more years than I care to remember, and have never had a problem. I even can my own Albacore Tuna, and of course anything I manage to grow. Ironically, I've never cooked a meal in a pressure cooker, but would if I had one that was smaller.

Along with the instructions that came with the canner, this is the book I use.
