That sounds great... using a thin layer of mayo is a great idea to "glue" the parmesan etc to the chicken. Must try it soon.

As far as coming up with ideas,,, I like to think of the various ingredients as a palette to select from for each different kind of meat/fish etc. And you can even subject that palette to leftovers to come up with a different meal altogether. So what was a chicken and marinara and mac and cheese then became a semi-lasagna by adding cottage cheese with the salsa and chilies to the leftovers.

The problem isn't so much deciding what to select from the palette, but in reducing the number of ingredients on that palette so as not to become overwhelmed by choices. And the palette can be different for various cuisines or cuts of meat or what have you.

I hope that isn't too confusing.
