examples of Punctuated Equilibrium that would have come about after the most recent Ice Age.

The end of the last ice wasn't a period in which organisms had to change to adapt to new environments. Instead organisms could just move from warm areas where they were to areas which had been previously cold but were becoming warm and then out-compete the organisms who were successful in the cold but struggled in the heat. The selection was not to change, only to expand their range.

The current glacial-interglacial cycle is about 50,000 years from warm-to-cold-to-warm again. This is a very low frequency cycle compared to the generation cycle of animals which is about 5 - 25 years for mammals. This means that individual animals don't have to move to follow the ice, instead they have children or great grandchildren which naturally spread out and populate new places. From their perspective there is no great change in the environment so they remain in an equilibrium period.

Great change comes from great events such as the meteor which struck 65 million years ago.
