Mine is not there yet... there are still green parts of the cabbage but the liquid is fermenting well. And it doesn't smell like sauerkraut yet.

I started a batch Saturday, and it's just today developed enough liquid to cover all of the shredded cabbage. I keep wanting to put it into the fridge, but will wait until it seems to be done. I smell it every time I take the cloth off the top to press it down, and so far it doesn't smell much like sauerkraut.

Have you tried any of your kraut in a meal?
