Sorry you don't have access to the ginger. It's one of my go-to supplements. I go through several ginger capsule bottles a year. I take it mostly if I have any distress after eating; they calm it right down. I have no idea about dosage on hot peppers, just incorporate a bunch of them in a meal somehow, but I don't know if cooking them affects their efficacy or not.
