I can apricot jam every two or so yrs specifically for cooking. It goes particularly well on poultry. (I have a stuffed [with bread and Chanterells] Cornish Game Hen recipe to die for.)

I am going to try your recipe on some white fish............Black Cod or Halibut.

I never did try this recipe on white fish, but I have two salmon filets thawing as I type and am going to make it tonight. One change I'm going to make is I'm going to add the sauce and then wrap the filets in filo and bake. Not sure how long to bake but I'll do a search and see what the web says?
