Excellent advice, and makes me want to get started experimenting with different sea food. Our grill is also right outside the kitchen door under a large overhang, so it's really easy to go out any time of year and cook dinner. We're actually in the process of connecting our grill to our large propane tank. It will be nice not to have to run to get our small bottles filled.

The only reason I am considering using a sauce on grilled seafood/fish is because I remember a time I was camping with a friend. She brought two halibut steaks and a bottled sauce..........sorry to say I can't remember the brand.......that was some of the most delicious fish I've ever eaten.

Another method I haven't explored is using rubs...........on either seafood/fish or any other meat. I am stuck in a rut when it comes to seasoning. Salt (Himalayan pink) pepper, onion pwd and garlic. You really can't lose with those four spices.

I saw a salmon rub in the NYTS.........cumin, coriander, ground cloves and nutmeg.

Might try that one.
