Thanks..............and glad you mentioned risotto. That is something I have been wanting to try. Today my husband and I went to lunch at a nice seafood restaurant down on the waterfront. I ended up ordering a "rice bowl." This one had coconut shrimp, salad and rice, but I had the option of going with salmon or chicken. It was so delicious I've decided I'm going to do a little research and try to come up with my own rice bowls for dinner. This one looks really good to me.
