And here is something else you may not know about eggs.... you can pasturize them in your slow cooker on warm which is around 140F. I let the temperature get to 140 then plunge the eggs in, maintaining that temperature for no longer than 3 minutes (5 for jumbo).... then plunge into cold water. They will last many times longer than just fresh eggs and you will notice no difference in using them pasteurized as fresh.

This is especially good to do if there is a sale on eggs - I have gotten them half price or lower. I just pasteurize them and don't worry when I use them - wouldn't let them go more than a month or so!
