When you are a supplier, the "demand" you care about is how many orders your customer places. In this case, Apple's orders giving us insight into what Apple's expectations are for the launch of the 7. But you're right, even Apple can't know how the end user demand will turn out. They have been wrong about that before, most notably last year, when Apple overestimated demand and ordered too many iPhone 6S' and related components for the launch. So coming down from that level isn't necessarily bad.
