Bit didn't they suddenly STOP the attack?

Why do that if it had been intentional?

And WHAT benefit would Israel GET from attacking that ship?

Israel NEEDED U.S. support and that attack could have ENDED U.S. support for Israel.

It makes no sense for the Israelis to do that.
