OK, you had me intrigued so I tried looking at my Apple email with my iPhone 6 Plus held horizontally.
I could not see your Email :-)
But I could see mine -- not sure when the change was made.

Actually this isn't a new thing there is a set of arrows on the top when the screen is split that you can touch and it make the message take up the whole screen.

You can then undo that option by touching inbox on the top left.

Never really used it before now but it is kind of cool to have the full screen message.
