"Why would you expect a variance from the mean over a 30 year period to be a significant fact when you are talking about event playing out over 100s and 1000's

It's significant because of the speed.It'll be a much bigger difference by the end of the century. This graph is a bit old, and cold. Feb'16 was way off the graph; 1.21 degrees C above the mean, or 1.51 above pre-industrial temps.

The reconstructed global temperature anomaly for the past 11,000 years. The Earth was warm (and warming) in the past, then started to cool...until the last century.
