When foreign manufacturers brought in cars with limited options and body styles

The one that really changed the market was the Honda Accord. By including a lot of things that were options for other cars as standard, it meant you could get a well-appointed vehicle for substantially less than the equivalent from some other company. American car companies were caught flat-footed, having made a substantial investment optimizing their assembly lines to efficiently customize each individual vehicle on an assembly line.

Everything kind of looks alike. Could be the time is ripe for something in between re customization.

It is already starting to happen. Between 3d printers and robotics, the tools are starting to become available. There is one company who is introducing a 3d, metal printer for $100k. That is less than a decent CNC machine.
