As a matter of fact, the quality of the wonton soup is the best thermometer on the quality of the Chinese cook currently on duty or if a Chinese restaurant with a steady record, best thermometer for the quality the restaurant!

....yes.....I notice wide variations in it also...........so I tend to stick with the Hot and Sour Soup
