I have two recipes I think are well worth sharing, I came up with them and tried them, both were a very pleasant surprise...

EGG BLUEBERRY MUFFINS


Ingredients

6 eggs

plenty of blueberries

a 6 muffin baking tin

No seasoning needed whatsoever...

Cooking Instructions

Spray the muffin pan with plenty of canola oil spray

Stir 6 eggs in a large mixing bowl

Distribute the eggs evenly into the 6 muffin baking tin

Drop in a small handful of blueberries, about 6 or 8 into each muffin

Bake at 420 for 10 minutes in a toaster convection oven...

No, I didn't forget the flour, NO flour, just eggs and blueberries...

When you remove the muffin tin, the eggs will be bloated like a souffle...

Remove from the oven and let stand for two minutes, then enjoy for breakfast with coffee, I prefer espresso...

SCRAMBLED BLUEBERRY EGGS

Stir 3 eggs, butter the pan and pour the eggs along with a hefty handful of blueberries...

NO seasoning needed, the blueberries will sweeten the eggs for both recipes...

Keep moving the eggs around the pan slowly and smoothly until they're done the way you like them...

Then enjoy with coffee or espresso...

If you like having pancakes for breakfast, I came up with a great recipe with no flour in it, I tried it yesterday for the first time, it was so delicious that I made it again today...

Ingredients for each pancake

1 banana
1 egg

Put the egg into a mixing bowl and scramble the egg

Peel the banana and place into the microwave for one full minute

With a fork, mash the banana into a mush and then add to the mixed egg...

Mix very well with a whisk until it has a smooth consistency just like pancake batter...

You can sweeten it with some agave or some honey, or just cook as it is...

Butter the pan and pour the mixture into the pan and cook just like you would a pancake...

I use 2 bananas and 2 eggs, it's very filling and very low calorie, and also very delicious...
