For diabetics there is a scientific basis for being too "acidic" - substituting potassium for sodium (50/50 for people with normal kidney functions) would reduce heart disease. We only use sodium salt because it is 10 times cheaper. But with that said - it would change the price of Campbell's soup by less than $0.01 tops (with a retail 10 x mark up of the ingredients which are $15 for 50 lbs at commercial grade.) It is a choice by food manufacturers to cut every nickel even when it causes major harm having high sodium WITH simultaneous low potassium. Normal kidney behavior pushes sodium out in the presence of potassium. I also add potassium bicarbonate to my club soda. Acidosis is a natural condition for diabetics - it messes up our proton pumps and interferes with fat digestion. This is nothing more than simple chemical inputs vs outputs. Bicarb is good but it usually travels with sodium (bad). You can also supplement magnesium bicarbonate but aggressive use can give you heart block and the trots. Moderation in all things, right? A pinch of Epsom salts in your club soda is another good thing.
